Dal Tadka — a classic Indian recipe, made simple for your home kitchen.
Cooking the Dal
- Rinse the toor dal thoroughly under running water until the water runs clear. Soak it in hot water for 20-30 minutes, if time permits. This helps in faster and more even cooking.
- Drain the soaked dal and transfer it to a pressure cooker. Add 350ml of water, ¼ teaspoon of turmeric powder, and ½ teaspoon of salt.
- Close the pressure cooker and cook for 3-4 whistles on medium heat. If using a regular pot, cook until the dal is soft and mushy (approx. 30-40 minutes), adding more hot water if needed.
- Once the pressure releases naturally, open the cooker. Lightly mash the dal with the back of a spoon or a whisk to achieve a creamy consistency. Add more hot water if the dal is too thick, to reach your desired consistency. Keep aside.
Preparing the Tadka
- In a small pan or tadka pan, heat 1 tablespoon of ghee or cooking oil over medium heat.
- Add ½ teaspoon of cumin seeds and let them splutter. Then add a pinch of asafoetida (hing).
- Add ½ finely chopped small onion and sauté until it turns translucent and light golden.
- Stir in ½ teaspoon of ginger-garlic paste and ½ finely chopped green chili. Sauté for another minute until the raw smell disappears.
- Add ½ finely chopped small tomato and cook until it softens and the oil starts to separate.
- Lower the heat and add ½ teaspoon of coriander powder and ¼ teaspoon of red chili powder. Sauté for 30 seconds, ensuring the spices don't burn.
- Pour this hot tadka mixture immediately over the cooked dal. Add ¼ teaspoon of garam masala and 1 tablespoon of fresh chopped coriander leaves.
- Stir well to combine.
Serving Suggestions
Serve hot with steamed basmati rice, roti, or naan. A side of pickle or a simple salad complements Dal Tadka beautifully.
For extra flavour, you can add a final mini-tadka of ghee, cumin seeds, and a whole dried red chili directly to the dal just before serving.
