Introduction
Bhindi Masala, or Okra Fry, is a beloved North Indian side dish known for its vibrant flavors and tender texture. This home-style version focuses on minimal sliminess and maximum taste, making it a perfect accompaniment to your everyday Indian meals like dal-chawal or rotis.
Preparing the Okra
- Wash the okra thoroughly and pat them completely dry with a kitchen towel. This is crucial to prevent sliminess.
- Trim the top and tail of each okra. Cut the okra into 1-inch pieces. If the okra are very large, you can cut them lengthwise and then into smaller pieces.
Cooking Bhindi Masala
- Heat 1 tablespoon of oil in a wide, non-stick pan or kadai over medium heat. Add the chopped okra and sauté for 8-10 minutes, stirring occasionally, until they are lightly browned and no longer slimy. Remove the okra from the pan and set aside.
- In the same pan, add the remaining 0.5 tablespoon of oil. Once hot, add the cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the ginger-garlic paste and cook for 1 minute until its raw smell disappears.
- Add the finely chopped tomato and cook until it softens and the oil starts to separate, about 3-4 minutes.
- Lower the heat and add turmeric powder, coriander powder, red chilli powder, amchur powder, and salt. Mix well and cook for 1 minute, adding a splash of water if the masala sticks to the pan.
- Return the fried okra to the pan. Add garam masala. Gently mix everything together, ensuring the masala coats the okra evenly.
- Cover the pan and cook on low heat for another 5-7 minutes, allowing the flavors to meld. Stir once or twice to prevent sticking.
- Garnish with fresh coriander before serving.
For best results and to avoid sliminess, ensure the okra is completely dry before frying. Also, don't overcook them in the masala; a slight crunch is desirable!
